Meet Dan Horvat, Prime's Friendly Food Guru!

Delicious local fare, homemade light bites, and beautiful sit-down meals are all on the menu for Prime West Knoxville’s new independent living community, says new Food Service Director Dan Horvat. 


As Prime West Knoxville, a vibrant senior living community with comfortable pet-friendly apartments prepares to launch in a matter of weeks, Horvat has been busy organizing a menu that will be the talk of the town.


“I know that great food and lots of choices are important to residents,” says Horvat, who boasts a career spanning 40 years in the food, healthcare, and assisted living fields. “The food service at Prime is one of the main parts of residents’ days and I want to make it special.”


Managing a staff of around 15 people, including chefs and servers, Horvat will run the restaurant kitchen as well as a coffee bar and an ice cream bar on-site. 


“We’ll have a five-week menu cycle tailored to the seasons with restaurant-style, sit-down meals each evening,” he reveals. “Our breakfast service will be continental and for lunch, we will have sandwiches, homemade soup, and lighter options for people who don’t want to eat real heavy meals. We’re going to make full use of all the amenities at Prime including the grilling area outside for smoking meat. We’ll pick fresh vegetables from our hydroponic garden and I’m looking forward to working with the residents to grow food.”

Dedicated to Providing Superior Food Service for Prime Residents

With lots of passion and enthusiasm, Horvat is looking forward to being very ‘hands-on’ at Knoxville’s newest senior living community.


“I’ll be there all the time,” he says. “I want to be really involved. I’m originally from Chicago but fell in love with the mountains when I moved here two years ago. I love learning about the local delicacies and tailoring our menu to Tennessee. We’ll have pimento cheese, cornbreads, greens, and different types of baked beans. If residents have family recipes we can put them on the menu too. I want them to know I’ll be there for them.”


With the resident's safety of the utmost importance, Horvat adds that his staff will be following all the latest state guidelines for COVID-19 and can’t wait to get started. He is already putting together plans for holiday functions, themed parties, and a build-your-own-burger bar.


“Prime is going to be a beautiful community,” he says. “The management team is really experienced and caring. They are constantly thinking about how to make it great for people. I like a positive environment and if the service is good and you got it going, you’ll have a lot of buddies. I love seeing people happy and knowing they are appreciative. I’ve got a lot of energy and experience and I just want to be part of it.”
